Lemon Balm
Sowing: indoor not required, outdoors Feb-June
Timing: germination 7-15 days, harvesting 40-60 days
Spacing: when sowing 2-3cm, when thinning 3-5cm
Growing: full sun to partial shade, regular watering not overdone, well drained light and moist soil, addition of fertilizer is not necessary
Caring: to keep lemon balm vibrant, trim the plant about 30cm high after the plant has stopped blooming for the season
Supporting: attracts bees and butterflies, repels mosquitos and fleas
Harvesting: lemon balm can be picked at any time, but choose young, bright-green and tender leaves to appreciate the citrusy flavour at its peak!
Medicinal: place lemon balm sachets under the pillow for a relaxing nights sleep
Eating: add lemon balm to fruit salads, herb butters and sorbets, or use it to add a citrus hint to refreshing fruit drinks and cocktails like the delicious lemon balm honeysuckle
Moroccan Spearmint
Sowing: indoors not required, outdoors Feb-Mar
Timing: germination 7-15 days, harvesting 40-60 days
Spacing: when sowing 1-3cm, when transplanting 3-5cm
Growing: partial shade, regular watering not overdone, well drained light and poor soil, addition of fertilizer is not necessary
Caring: mint can be grown easily from seed but do not cover the seeds after sowing as they need light to germinate
Supporting: attracts bees, butteries and ladybirds, repels ants and aphids
Harvesting: Moroccan mint can be picked at any time, but some of the flavour is lost after flowering. Try to pick mint in the morning, when its heady oils are at their strongest
Medicinal: crush a few leaves and massage them into your temples to ease a headache
Eating: use the mint generously in classic mint-laced cocktails like the Mojito, and the Mint Julep. It also makes a fantastic garnish for the elegant, old-fashioned Grasshopper cocktails
Mix Shiso
Sowing: indoors Feb-March, outdoors Apr-June
Timing: germination 7-15 days, harvesting 40-60 days
Spacing: when sowing 1-3cm, when thinning 3-5cm
Growing: full sun to partial shade, regular watering not overdone, well drained light and moist soil, addition of fertilizer is not necessary
Caring: to give germination a jump start, soak Shiso seeds overnight before sowing. Also, sow more seeds tan you need, keeping the soil constantly moist
Supporting: attracts bees and butterflies, repels aphids and mosquitos
Harvesting: you can eat sprouts in salads, or pinch leaves out from the adult plant as you need them. Shiso is best used fresh as the leaves rapidly lose flavour when dried
Medicinal: Asian herbalists use Shiso as a medicine to treat coughs and lung problems
Eating: it can replace mint in Mojitos and Juleps to provide singed-up versions of these old favourites. Use it in vodka based cocktails or add a green Shiso green leaf for an outstanding Martini!
